Recipe for Homemade Orgeat Almond Syrup

 
An orgeat is one of many pastries and drinks flavored with almond milk. This drink is a key ingredient in the latte-like drink called the orgeat. It can be found in cafes everywhere, as well as added to juices and cocktails. If you want to make your own at home, making an orgeat syrup is easy and simple. With only a few ingredients and a bit of time, you can make your homemade orgeat syrup.


To make an orgeat syrup, you will need Water, sugar, toasted almonds, almond extract, and orange blossom water.

In a large pot on the stove, add three cups of water and 1/3 cup of sugar. Heat them until the sugar is dissolved. Remove the pot from the heat; let it cool off for at least an hour. The final temperature should be between 10 and 20 degrees Celsius (50-68 degrees Fahrenheit). It’s best not to make this in the summer as it is important that it is cool enough to prevent bacterial growth.

Once the mixture is cooled, combine 1/3 cup of it with toasted almond shavings (1/3 to 2/3 cups). Grind the almonds using a blender or food processor. If you don’t have a blender, you can use any strong kitchen grinder. You do not need to grind them into a fine powder as they are going to be strained out anyway. Stir in 1 teaspoon of almond extract and then pour your mixture into cheesecloth. Squeeze all of the liquid from the cheesecloth and set it aside until all of the liquid has drained out. Throw away the used almonds as they will have turned brown by this time.

Now, the solids that are left in the cheesecloth can be discarded. However, you want to squeeze as much liquid out of them as possible. The amount that you squeeze out of this mixture will help determine how sweet your syrup will be. For example, if you only get ¼ cup of liquid from squeezing the cheesecloth then your syrup won’t be as sweet.




Next, turn your attention to the liquid left in the pot and add orange blossom water to it. You can find this at any Middle Eastern grocery store; however, if you cannot get your hands on some orange blossom water you can make a substitute using grapefruit juice and almond extract instead.
