INGREDIENTS
- 1 tablespoon olive oil
- 4 large eggs, lightly beaten
- Kosher salt and freshly ground black pepper, to taste
- 8 slices whole wheat bread
- 8 ounces Wisconsin cheddar cheese, shredded
- 8 ounces of thinly sliced ham
INSTRUCTIONS
1. The waffle iron should be preheated to medium-high heat. The waffle iron's top and bottom should be lightly oiled or coated with nonstick spray.
2. Over medium-high heat, warm up the olive oil in a big skillet. Add the eggs and whisk them in until they just start to set. Add salt and pepper to taste. Continue cooking for a further 3-5 minutes, or until the egg has thickened and no liquid is visible.
3. Place the bread into the waffle iron in batches. Add the remaining bread slices, cheese, ham, egg mixture, and extra cheese on top. Close carefully and cook for 3–4 minutes, or until golden and crisp.
4. Serve right away.
