HOMEMADE BREAKFAST SAUSAGE
INGREDIENTS
- 1 tablespoon chopped fresh sage leaves
- 2 teaspoons chopped fresh thyme leaves
- 1 teaspoon fennel seeds, crushed
- ½ teaspoon crushed red pepper flakes, optional
- ⅛ teaspoon ground nutmeg
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ pounds of ground pork
- 3 slices uncooked bacon, diced
- 2 tablespoons maple syrup, optional
- 1 tablespoon canola oil
INSTRUCTIONS
1. SAGE MIXTURE: Combine the sage, thyme, fennel seeds, red pepper flakes, nutmeg, and 1 1/2 teaspoons each of salt and pepper in a small bowl.
2. Pork, bacon, maple syrup, and SAGE MIXTURE should all be combined in a large basin; take care not to overmix.
3. Scoop out 1/4 cup (or approximately 2 ounces) of the pork mixture, flatten, and shape into 16 patties that are between 2 1/2 and 3 inches broad.
4. A big cast iron pan filled with canola oil is heated to medium heat. Add the sausage patties and heat for 2 to 3 minutes per side or until browned.
